Why use the exequeror?
1. Having only 4 highs does slow looting down a little, I find that with only 5 targetting slots I seem to keep up fairly well. Destroyers turn into a click fest and take more brain effort to run. I find that I can get into a good efficient rythym with looting in this ship. I can swing the view out wide and plan the most efficient route to loot the most effectively.
2. MWD on a cruiser is much gentler than MWD on a desty. I can MWD while still salvaging a couple of wrecks in tow. I only do a single MWD burst (ie activate/deactivate). This means that the net effect is increased looting speed. Also, I can use the AB continuously if I am salvaging BS wrecks which seem to take longer.
3. 1000m3 of hold. Quite a few missions exceed 500m3 of loot. Having the extra hold space means that I can loot 90% of all missions in one go.
4. No cap issues. Even if you leave the MWD or AB on the cap recovers quickly enough to run tractors and salvagers with out annoying deactivations.
On that note I have a thrasher setup (3 tractor/5 salv) which works great but as I said above: It can get confusing and I find that I rarely have all the mods working at once. Having 5 targetting slots does severely limit the number of tractors you can use at a time. Having 2 tractors and 6 salv means that a number of salvagers are either not going or not of any real benefit. They just add to the clickfest that is salvaging (yes, even with using the F keys).
Also the thrasher runs out of cap from time to time which breaks the flow and is irritating. This is especially evil if you leave the AB/MWD runing by mistake.
On a final note, in the longer missions there is a real risk of losing wrecks from the first room to time limits. I will loot a room when it reaches 1 hour old to avoid the poppage. In the Exequeror I can loot a room in about 5 minutes mostly, even if there are wrecks 60k apart.

This is both what I use and why...
Yes detroyers have more high slots and that is fine if you are JUST doing salvaging. But, if you have signficant non-salvage loot you need the cargo space, and yeah I don't really manage 4x tractors and 4x salvagers all that efficiently anyway...
